I LOVE SPELT

I do not have wheat allergies or intolerances, but I really enjoy baking with spelt. My bread is lighter, has an incredible texture, it is soft, and more moist than I have been able to make before. I love using spelt. (Yes, I've even used it in my cookie recipe.)

You can feel better about what you eat when you cook with spelt. Most people I talk to eat spelt because they have wheat intolerances or allergies.
In fact, I talked to one young lady (roughly 30s), who said her body used to ache and she just didn't feel good. After a few experiments and taking advice from family, she decided to try spelt. She can now eat more things - carbohydrates, for one, including bread, pastas, and so much more and still feel good!
(Note: If you have severe allergies, you might really want to consult your doctor before trying spelt.)
